My favourite Salad and My Favourite Meal




Ingredients


1 punnet of Cherry Tomatoes

1 x red/green capsicum

1 x can of split peas (this can be other beans and they can be cooked from scratch if preferred)

1 x packet of Fetta cheese

1 x cucumber

1 x lemon

1 x desert spoon of Olive Oil


Preparation

  1. Cut the cherry Tomatoes in half and add them to a large bowl

  2. Cut the Cucumber into small pieces about the size of the tomato pieces and add them to the bowl

  3. Cut the capsicum into small pieces of about half a centimeter and add them to the bowl.

  4. Drain and rinse the split peas well and add them to the bowl.

  5. Add the packet of Fetta cheese to the bowl.

  6. Add a desert spoon of olive oil to the mix and squeeze the lemon juice from the lemon into the bowl being careful to remove the seeds.

  7. Mix the salad together well.

This will serve 4 people.


How to enjoy My Favourite Salad


This salad goes well with my favourite meal.


Grilled Salmon, Basmati rice and

My Favourite salad.


Basmati Rice


Cook the Basmati rice using the reduction Method;

  1. Add 2 cups of rice to 3 cups of water to a saucepan.

  2. Bring to the boil

  3. Switch off the heat and allow the water to soak into the rice.

Salmon (skin on)

  1. Heat a non stick pan to Medium and add 1 table spoon of olive oil.

  2. Cook the 4 x salmon Fillets starting with the flesh side down first.

  3. After 3 to 4 minutes turn the salmon fillets over with skin side down.

  4. Add lemon pepper seasoning to the flesh side

  5. Cook for another 3 to 4 minutes.


Serving

  1. Add the basmati rice to the plate and spread thin

  2. Put the Salmon fillet on top of the Basmati Rice Flesh side down.

  3. Pour some of the salmon juices over the salmon and on to the rice.

  4. Add salad to the plate.
